Easy To Make Green Bean, Egg and Quinoa Salad

Here’s a tasty and innovative way to eat your green beans – tossed with quinoa, sliced plum and topped with hard boiled egg. Ingredients

  • 1 cup red quinoa, cooked
  • 2 cup green beans, steamed
  • 2 ripe plum, thinly sliced
  • 2 hard-boiled egg, sliced
  • 2 tsp sesame oil
  • 2 tbsp fresh lime juice
  • Pinch of sea salt
  • ground black pepper

Instructions

  1. Cook the red quinoa in a medium size pot on the stovetop.

  2. Steam green beans and cut them into 1 inch slices.

  3. Combine the quinoa, beans, plum and egg in a large bowl.

  4. Whisk together the sesame oil, lime juice, salt and pepper as dressing and drizzle over the mixture. Toss ingredients together and enjoy!
