Great Combination Lentil Fruit Salad
This recipe gives a light and refreshing side dish or light meal for the summer months using its freshest ingredients. The combination of plump lentils with chunks of fresh fruit and a splash of balsamic vinegar gives you a new and different flavor that will fill you up without weighing you down.
- 2 cups black lentils, cooked
- 2 medium mangos, cut into 1 inch cubes
- 2 medium tomato, chopped
- 12 medium strawberries, chopped
- 2 tablespoons red onion, finely chopped
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Place the lentils in a Large bowl.
Before you put the all the fruit into the bowl with lentils, make sure to chop the fruit and onions.
Add the vinegar to the lentils and fruit, mix until well combined.
