Fiber Filled Zucchini Pasta with Turkey

Making noodles out of zucchini is a great way to cut back on carbs and still enjoy your favorite pastas. All you need is a spiral slicer, which is a small investment that will create countless delicious dinners for you and your family. These fiber-filled noodles combine with ground turkey for a tasty new twist on spaghetti.

Ingredients

  • 2 zucchini, ends trimmed and run through a spiral slicer
  • 1/2 teaspoon olive oil
  • 1/4 cup chopped onion
  • 1 1/2 garlic cloves, minced
  • 1/2 (20oz) package lean ground turkey
  • 1 cups spaghetti sauce
  • Salt and pepper to taste

Instructions

  1. Place the spiral-sliced zucchini in a large bowl and set aside. 

  2. In a medium sized skillet heat the oil. Add the onion and garlic and sauté until soft. 

  3. Add the turkey to the skillet and cook until fully browned. 

  4. Add the spaghetti sauce and mix until fully incorporated. Remove from heat. 

  5. Mix the sauce with the zucchini noodles in the large bowl and serve.
