Quick and Easy Breakfast Protein Parfait
This is a quick and easy recipe to prepare the night before so you are prepared in the morning to grab-and-go. Not only is it packed with protein, vitamins and minerals for sustained energy all morning long, but it tastes great too!
- 1/2 cup Greek Yogurt, plain, fat free
- 1/2 cup low fat cottage cheese
- 2 scoop high quality strawberry or vanilla protein powder
- 1/2 cup fresh berries
- 2 Tablespoon pecan or walnut pieces, toasted
In a small bowl use a whisk to combine the yogurt, cottage cheese and protein powder. Mix well until the ingredients are fully incorporated.
Place half of the yogurt mixture into a clear cup before adding the berries and the remaining yogurt mixture.
Top with pecans/walnuts & store in the fridge.
Nutritional Analysis: One serving equals: 260 calories, 6g fat, 307mg sodium, 11g carbohydrate, 4g fiber, and 38g protein.
