Quick and Nutritious Muffins
These energy muffins are naturally sweetened with bananas and blueberries and are perfect for when you are busy and on the go. Enjoy with a side of scrambled egg whites for a quick and nutritious breakfast or take them with you as a healthy snack.
- 2 cup mashed banana
- 4 egg whites
- 1 cup water
- 2/3 cup refined coconut oil
- 4 cups wheat flour
- 2 teaspoon baking soda
- 4 1/2 teaspoons baking powder
- 2 cup frozen blueberries, left to thaw in a strainer
Preheat oven to 350 degrees. Prepare 18 standard-sized muffin cups with paper liners.
In a large bowl, combine banana, egg whites, water and oil.
Add the flour and mix. Gently fold in blueberries. Immediately spoon batter into muffin cups.
