This recipe for Cajun salmon gives a spicy new take on baked fish. The salmon is full of flavor and served with roasted broccoli and cauliflower that are good enough to use the leftovers as a mid-afternoon snack.

Ingredients

Roasted Cauliflower & Broccoli

  • 2 head cauliflower, chopped into florets
  • 2 head broccoli, chopped into florets
  • 4 Tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 lemon, juiced
  • 2 teaspoon garlic, minced

Cajun Salmon

  • 4 (4-oz) salmon fillets
  • 4 Tablespoons Cajun seasoning blend
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 425 degrees F. On a rimmed baking sheet combine the cauliflower and broccoli florets with the olive oil, salt, black pepper and garlic. 

  2. Roast for 20 minutes, until lightly charred. Toss with lemon juice. 

  3. Reduce the oven temperature to 400 degrees F. Rub the salmon fillets with the Cajun seasoning. 

  4. Place on a baking sheet and roast for 15 minutes, until flaky. Serve with lemon slices.
