Simple Spinach Salad
Spinach serves as the base for this light and delicious salad. High and protein and topped with your own homemade dressing, it lends a lot of flavor without a lot of calories.
- 9 cups organic baby spinach
- 6 hardboiled eggs, chopped
- 9 pieces bacon, crumbled
- 1 1/2 cup cherry tomatoes, halved
- 1 1/2 teaspoon olive oil
- Juice from one lime
- Dash of pepper
Combine the spinach, eggs, bacon and tomatoes in a large bowl.
In a medium bowl whisk the olive oil, lime juice and pepper.
Pour the dressing over the salad, mix and serve.
