Ingredients

  • 9 cups organic baby spinach
  • 6 hardboiled eggs, chopped
  • 9 pieces bacon, crumbled
  • 1 1/2 cup cherry tomatoes, halved
  • 1 1/2 teaspoon olive oil
  • Juice from one lime
  • Dash of pepper

Instructions

  1. Combine the spinach, eggs, bacon and tomatoes in a large bowl.

  2. In a medium bowl whisk the olive oil, lime juice and pepper.

  3. Pour the dressing over the salad, mix and serve.
