Delicious and Healthy Cookies

Yes, you can have cookies for breakfast! There is no added sugar to these cookies – the sweetness comes from the bananas and applesauce. If you want to increase the protein content, add a large scoop of vanilla or chocolate protein powder to the dough. The prep time is worth it when you have easy breakfast or snack for the week!

Ingredients

  • 6 ripe bananas, mashed
  • 1 cup unsweetened applesauce
  • 4 Tablespoons coconut oil
  • 2/3 cup golden raisins
  • 2 teaspoon vanilla extract
  • 2 teaspoon apple cider vinegar
  • 2/3 cup coconut flour
  • 2 teaspoon ground cinnamon
  • 2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • Optional, scoop of vanilla protein powder
  • 1 cup unsweetened shredded coconut
  • 1/2 cup sliced almonds
  • 1/2 cup unsweetened, dried berries

Instructions

  1. In a food processor, mix the bananas, applesauce, coconut oil, raisins, vanilla extract and vinegar. Mix ingredients until smooth.

  2. In a large bowl combine the coconut flour, cinnamon, baking soda, salt, and the protein powder. Add the mixture to the food processor and pulse until combined. Mix in the coconut

  3. Pulse the mixture briefly until just incorporated.

  4. Use an ice cream scooper to place the dough 2-3 inches apart on a baking sheet lined with parchment paper. Flatten slightly. 

  5. Bake for 25-35 minutes, until golden and baked through. Allow to cool on the sheet for at least 5 minutes. 

  6. Nutritional Analysis: One serving equals: 86 calories, 3g fat, 61mg sodium, 10g carbohydrate, 2g fiber, and 5g protein.
