Simple Ham Cups Breakfast Snack

This ham and egg cups make the perfect on-the-go energy food. They are great to have for breakfast or as a snack that is packed with protein and fiber. Make a dozen to enjoy throughout your week.

Ingredients

  • 2 teaspoon olive oil
  • 2 clove garlic, minced
  • 1 yellow onion, chopped
  • 24 slices of nitrate free ham
  • 2 cup broccoli, steamed and chopped
  • 1/2 cup shredded cheddar cheese
  • dash of salt and pepper
  • 24 eggs

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray a muffin pan with nonstick cooking spray and set aside.

  2. In a medium sized skillet, heat the olive oil over medium heat. Add the garlic and onions, cooking until tender.

  3. Add the steamed broccoli, cheese, salt and pepper. Mix until fully combined. Remove from heat.

  4. Using kitchen scissors, make a slice to the center of each piece of ham, then fold into a cone shape in each muffin cup. Fill halfway with the broccoli mixture.

  5. Crack an egg into each ham cup. Bake for 16-20 minutes, or until the edges of the ham are crispy.
